Recipe: Stuffed Zucchini

Stuffed Zucchini
I found this yummy recipe on www.food.com! My hubby loved it--so I thought I would share it! It was super easy to make!

What you need: 
3 zucchini

2 tablespoons onions, minced
2 tablespoons garlic, minced
3 tablespoons butter
1 cup soft breadcrumbs
1/2 cup Tomato, cooked
salt and pepper
parmesan cheese, optional

Directions:

1. Boil the zucchini for 10 minutes.
2. Cut zucchini in halves and scoop out the middle. 
3. Cook Onion, Garlic and Tomato for 2-3 minutes.
4. Mix zucchini and the rest of the ingredients.
5. Stuff the zucchini and bake at 350 F oven for 15 minutes.
6. Top with Cheese and serve!

Journalists Bundle Up with Huggabeans

While most of the country battles historic arctic temperatures, news and weather reporters are left shivering in the cold.  It’s all a part of the job!  But when wind chills are below freezing, news crews have to find a way to keep warm! For the past 6 years, I've been lucky to enjoy 80 degree temperatures during South Florida's winters. But it wasn't always that way--here's a clip of my Ice Storm Coverage from KOCO ABC!

Craft Your Heart Out

There's no better excuse than Valentine's Day to get your friends together for some crafting fun. Last week, I attended Craft Your Heart Out hosted by Amber of Damask Love!  She did an amazing job teaching us Paper Crafts with the Conversations Heart Party Décor by Minted!

There were several crafting projects-including this adorable candy valentine treat bag! 
1. We filled up clear plastic baggies with M&M's
2. We were each given pre-cut pieces of paper measuring about 3 inches by 8 inches
3. Using the scalloped edge blade, we created trim at the top of our baggie
4. We also created an O for the opening of the baggie
5.  After we stapled the candy baggies and folded the paper to form the bag. Finish it off with a pretty piece of twine!
