Mashed Potatoes Yummy Surprise Recipe


We all need easy recipes for the holidays, so I thought it would be great to share this one!
My amazing executive producer Amanda Stanley from WPLG Local10 brought this yummy dish into work--And it was a GREAT hit!

Ingredients

2 Pounds of potatoes
1 pkg of Velveeta Cheese
½ cup of butter
1 green pepper chopped
2 green onions chopped
½ cup of cheddar cheese

1.      Place potatoes into a big pot--Bring to a boil. Reduce heat; cover & cook for 10-15 minutes or until tender. Drain.
2.      In a large bowl, mash the potatoes and mix in the butter & cheese! Then stir in the green peppers & onions! Also top with some cheddar cheese!
3.      Cook for about 20-25 minutes in the oven at 350°! Serve warm!

YUMMY- High Fiber Brownies

My sister Stacie is a health freak- who loves chocolate. A weird mix--right?!? She found this yummy High Fiber Brownie Recipe from Tastefullyjulie.com
It's so so so so good!





Ingredients
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2 large eggs
  • 2 egg whites
  • ¼ cup melted butter
  • ¼ cup plus 1 tablespoon cocoa powder
  • 1 teaspoon vanilla
  • ⅔ cup sugar
  • ½ cup semi-sweet chocolate chips 

Instructions

  1. Preheat oven to 350 degrees F
  2. Grease or spray an 8-inch baking pan.
  3. Process all ingredients EXCEPT chocolate chips in a food processor until well blended.
  4. Transfer mixture to the prepared pan. Sprinkle with chocolate chips.
  5. Bake the brownies for 30 to 35 minutes, or until just set in the center.
  6. Cool before cutting into squares.

Jamaican Rum Cake!

It's one thing that I love about South Florida--the amazing Caribbean food!!  If you've never tried Jamaican Rum Cake-- you are definitely missing out! It's typically made for special events, like Christmas! Most of the cakes are made with yummy fruit soaked in your favorite Jamaican Rum. The longer you soak the fruit--the tastier the results!

Weenie Muffins







This easy treat is great for breakfast, lunch or dinner… Cornbread Dog Muffins! I like to call them-- Weenie Muffins! Special thanks to my Morning Executive Producer Peggy Phillips for sharing these goodies with me!

Here’s what you need:
·         2 packages of cornbread mix
·         1 cup of milk
·         2 eggs
·         6 hot dogs

Directions: Mix all of your ingredients for your cornbread mix—including your milk and eggs.  Chop your hot dogs into little pieces.

 
Fill paper lined muffin cups 3/4 full.  Stick your hotdog in the center of the cupcake.  Bake at 400 degrees for about 16 minutes.

Serve Warm!
